Spicy Glass Noodle Salad

This glass noodle salad belongs to the classics of Thai street cuisine. It is served in various forms – sometimes with minced pig liver or fresh shrimp, at other times with different types of sauces, simple and elaborate. Here, we reproduce a recipe used by Lun, Raina and Gobli's cook, who prepared this salad one evening in Bangkok under the observant gaze of secret agent Hektor Maille.

A particular attraction of this salad is that it can be served luke-warm, which in our opinion, optimises its aroma.

Ingredients (for 2 to 4 persons)

1 tablespoon rapeseed oil

100 g pork mincemeat

 

1 teaspoon white pepper, ground

1 snall teaspoon shrimp paste

3 tablespoons lime juice (1 lime)

2 EL fish sauce

1 teaspoons palm sugar (or white sugar)

chillies of the Bird's Eye type, stalk removed and finely chopped (if they are very small take 8)

1 or 2 pods garlic, pressed

1 heaped tablespoon dried shrimps (big red ones without head as they can be found easily in Asia-Shops)

100 g glass noodles

1 grosse tomato, deseeded and cut in stripes

3 tablespoons spring onions, chopped

For the decoration some leaves of basil Horapa and red chillies

Glass Noodle Salad can be well prepared for a evening with guests.

Preparation

  1. Heat oil in a frying pan and fry mincemeat. When almost done add pepper; shrimp paste and about 4 tablespoons water. Stir well until the paste is completely resolved, cook until water has evaporated. Set aside.
  2. Mix lime juice, fish sauce, palm sugar, chilis and garlic to make a sauce
  3. Soak the shrimps for 5 minutes in warm water, drain and chop in little pieces or grind in a mortar.
  4. Poor boiling water over the noodles and allow them to soak for 3 to 5 minutes. Drain well and put in a salad bowl.
  5. Add meat, sauce, shrimps, tomato and onions, stir quickly. Serve immediately decorated with basil and chilis.

Die lukewarmly effect is kept better if the noodles are put in a slightly preheated salad bowl.

There is hardly a streetfood stall in Thailand that does not offer this spicy glass noodle dish.
