Combuse: Zander (1 kg) remove intestines, rinse and pat dry (do not scale or remove the gills). Mix 2 kg coarse sea salt with 5 tablespoons Sichuan pepper. Knead into this mixture 4 slightly beaten egg whites. Give half of the mixture onto a baking tray lined with a sheet of baking paper, spread it in size of the fish. Put fish on the salt, cover entirely the body of the fish with the remaining salt mass, smooth the surface. Bake the fish in the oven at 200° for 35 minutes. Take out of the oven and let stand for 5 to 10 minutes. Gently break up the salt crust. (More recipes from the Chief cook of «PS Narina»)

Observations

The sky over a boat is for you alone; you don’t need to share it with anything but the sea from horizon to horizon. This leads us to accept as a truth that thinking is also an unshared thing – almost as if we were the first person on earth, or the last. Whereby hangs the formulation of a certain droll humour: «The first person on earth, we». Without ants it doesn’t function.
