Combuse: Lemusan mackerel (400 g) remove intestines, fillet and draw from the skin as much as possible. Cover the fillets with 200 g salt and leave for 1 hour. Rinse the fillets well and pat dry. Mix 1.5 dl clear rice vinegar, 2 teaspoons mirin, 2 teaspoons salt in a sauce and let the fillets marinate in it for two hours. Take out the fillets from the marinade and pat dry. Observations

What would a journey without a destination be? A launch without a planned landing, an embarkation with no formal disembarkation: a meaningless undertaking. It is the destination that holds the journey together, that gives it form and foundation. The traveller needs to have a goal in sight in order not to turn back – even if he doesn’t ever reach the goal, or doesn’t even ever want to reach the goal.  Viewed through this prism, the most important aspect of the goal is the traveller’s attitude towards it; it steers the traveller in the right direction, the direction of the journey.

In any case, there are many different ways of steering a vessel towards the destination, and some ways are such that the compass needle pointing in the right direction performs a wild dance. A paper boat, for instance, cannot be navigated – how should it reach its destination? The answer is simple: Santa Lemusa lies nowhere and it lies everywhere. As a result, one can get to it in exactly this way – without any navigation.
